It is basically made with layering the marinated cooked chicken at the bottom and then far cooked rice, herbs and saffron milk. You can reduce the amount of red chili to make is less spicy according to your taste. Biryani is best served with raita, salad.

WHAT IS BIRYANI?

Biryani is basically a rice dish. It is made with layering the chicken curry with rice and many other ingredients like tomatoes, mint, coriander, and also food color to give biryani a nice color that make your mouth watering.
There are two type or biryani according to their cooking method and obviously it make the taste difference.

Kachi (Raw) Biryani:
In this biryani the marinated chicken is not cooked but boil the rice separately than layer the uncooked chicken at the bottom of the pot and pre cooked rice.

Paki (Cooked) Biryani:
In this type or biryani the marinated chicken is cooked before layering it with pre cooked rice.
In Pakistan the paki biryani is most famous with different names like sindhi biryani, dam biryani, and Bombay biryani.

Ingredients:



For Marinating the Chicken:


- 500 grams of chicken pieces

- 1/2 cup plain yogurt

- 1 teaspoon red chili powder

- 1/2 teaspoon turmeric powder

- Salt, to taste



For the biryani:


- 2 cups Basmati rice

- 2 large onions, thinly sliced

- 2 tomatoes, chopped

- 2-3 green chilies, slit

- 2 tablespoons ginger-garlic paste

- 1/2 cup plain yogurt

- 1/4 cup chopped fresh coriander leaves

- 1/4 cup chopped fresh mint leaves

- 2 tablespoons vegetable oil

- 2 tablespoons ghee (clarified butter)

- Whole spices: 2-3 cloves, 2-3 green cardamom pods, 1-inch cinnamon stick, 1 bay leaf

- 1/2 teaspoon turmeric powder

- 1 teaspoon red chili powder

- 1 teaspoon cumin powder

- 1 teaspoon coriander powder

- Salt, to taste

- A pinch of saffron strands soaked in 2 tablespoons of warm milk (for garnish)



Instructions:


1. Marinate the Chicken:

   - In a bowl, mix chicken pieces with yogurt, red chili powder, turmeric powder, and a pinch of salt. Let it marinate for at least 30 minutes. This helps the chicken become tender and flavorful.


2. Prepare the Rice:

   - Wash Basmati rice thoroughly and soak it in water for 30 minutes. Drain and set aside. This step ensures fluffy rice.


3. Saffron Milk:

   - Soak saffron strands in warm milk for a beautiful color and aroma.


4. Sauté Onions:

   - Heat vegetable oil in a large pan. Add thinly sliced onions and cook until they turn golden brown. Set aside half of the fried onions for garnishing.


5. Cook the Chicken:

   - In the same pan with the remaining onions, add marinated chicken. Sauté until the chicken turns white. Remove and set aside.


6. Spice It Up:

   - In the same pan, add ghee and whole spices. Sauté for a minute until fragrant.

   - Add ginger-garlic paste and green chilies. Sauté for a few minutes until the raw smell disappears.

Tips:

Tips for tender and flavorful chicken:

1.Marinate your chicken over night or at least for two hours it make the chicken more flavor full.

2. Take your chicken out of the fridge and attain it the room temperature it will make the chicken soft and tender.
 
3. In oil while cooking chicken add littles water and cover the pot to make chicken soft.


Tips for fluffy rice:

1. Boil your rice for 5 minute that it should not be completely cooked

2. Long grain basmati rice is best for biryani as it doesn't stick and remain fluffy.

3. Add vinegar and salt while boiling, as tge acidity of it prevent from sticking.

HOW TO FIX OVERCOOKED RICE?

If you overcooked the rice to prevent if from sticking and mashy strain the water immediately and spread rice on tray to cool it and avoid from sticking

Before layering remove the excess water from curry when the oil is separated than add rice and reduce the time of dum.

HOW TO FIX UNDERCOOKED RICE?

If your rice is under cooked then add water after straining water and also don't remove the excessive water from curry. The moisture in curry will nicely cook the rice 

Increase the time of dum 

Cover the lid of pot with clean wet kitchen towel to lock the moisture and make the rice properly cook.
